Wow, this was so easy, delicious, and made the whole house
smell like fall! I’ve been wanting to
try some sort of pork and apple dish, and the idea of a crock pot meal on a
chilly Sunday sounded perfect! I ended
up reading a bunch of different recipes before making my own with pieces of
each. Both my husband and 1 year old
daughter loved this! We served it over
rice pilaf and it was delicious. The
pork was literally falling apart it was so tender, which made me feel better
about giving our little one some small pieces of the pork, she obviously loved
the cooked apples too! Be sure to scoop
out the delicious juices that develop in the crock pot to serve over your meal!
Ingredients
2-3lb pork
tenderloin
2 apples,
thinly sliced, then halved to make half circles
1 yellow
onion, sliced thin
½ tsp
cinnamon
¼ cup honey
Directions:
- Make horizontal slices across the tenderloin, every 1-2 inches, without slicing all the way through. You are aiming to make little horizontal pockets down the length of the tenderloin. Place the pork in the crock pot.
- Using one of the apples, place 1-2 apple slices in each pocket of the pork.
- Place the slices of the other apple, and the onion slices on top of the pork.
- Drizzle with entire thing with the honey, then sprinkle the cinnamon on top.
- Cook on low for 6 hours.
- Serve over rice, potatoes, or whatever you would like!
Quick photo of the pork stuffed with the apple slices, and onions on top. Once the apple slices, honey and cinnamon went on top, it wasn't as easy to see the stuffing. Hope this helps!
