Quick Weeknight Stirfry

Between getting out of work, picking our chick up at daycare, and preparing everything for everyone's next day, cooking dinner has definitely fallen off of my priority list!  But the other night I remembered an easy classic that is healthy, tastes delicious and is ready in less than 15 minutes- a chicken and pepper stir fry over brown rice!

Ingredients:
3 chicken breasts
Bag of frozen bell pepper and onions (I don't buy anything labeled "stir fry" as I like to add my own spices and a plain bag like this is often only $1 at Stop and Shop!)
2 tsp olive oil
1/4 tsp garlic power
1/4 tsp paprika
1/4 tsp chile powder
1 Package 90 second Uncle Ben's Brown Rice

Directions:
1) Cut chicken into strips and sprinkle with garlic power, paprika and chile powder. 
2) Heat olive oil over medium-high heat in large sauté pan. 
3) Once pan and oil are hot, add chicken and cook, 7-10 minutes, until cooked through. 
4) Remove chicken from pan.  Add bag of frozen peppers. Cook 5-7 minutes until soft. 
5) Add chicken back to pan and stir.  While rice heats, continue to cook peppers and chicken together, stirring occasionally.  I find this allows any water from the frozen peppers to reduce down and become more of a flavorful sauce 
6) Serve peppers and chicken over brown rice and Enjoy!
